Sweet Corn Chowder

Ingredients:
1 cup Corn Kernels (frozen, canned or fresh)
1/2 cup chopped Onion
3-4 diced Potatoes (or Sweet Potatoes)
2-3 Carrots, diced
2-3 cloves Garlic, crushed
2 Tablespoons Butter
salt and pepper to taste
4 cups Corn Stock (or other broth)
1 cup Cream or Whole Milk
4 Tablespoons Butter
4 Tablespoons All-Purpose Flour
Chopped Fresh Herbs of your choice

In a soup pot heat 2 Tablespoons Butter over medium heat. Sauté Potatoes, Carrots, Onion and Sweet Corn for 3-4 minutes with Garlic, salt and pepper to taste. You want the veggies to be just starting to cook. Add Flour and Butter to the pot, stir to combine and cook for another 2-3 minutes. Add Corn Stock and stir to combine well, simmer for 20-30 minutes. As the Chowder cooks it will thicken. Check for seasoning, add Cream or Milk, salt/pepper or a dash of sugar to your taste. Serve with Crackers, a sprinkle of Cheese and chopped fresh Herbs to garnish.
