Prepare Greens: Wash, trim and chop 1.5 – 2 pounds of Mixed Greens. Our favorite combo is Kale, Turnip and Mustards but any type of Greens are great. Chop 4-6 Green Onions (or 1 small Onion) and 2-3 cloves Garlic (as much as you like).
Heat 2T Olive Oil in a skillet, add Onions, stir to heat through, add Greens and Garlic, stir just to wilt. Season with salt and pepper, cover and reduce heat to low for 5 minutes. We like to add some Red Pepper flakes for a little heat.
Prepare cream mixture: 2 Tablespoons Corn Starch, 1 cup of Heavy Cream or Whole Milk, salt and pepper, a good pinch or grating of fresh Nutmeg, 1/2 cup grated cheese of your choice.
Prepare a 9″ square Casserole dish by oiling or buttering the bottom and sides.
Spread Greens and pour cream mixture over all, smooth over the top. Bake at 350 degrees for 20-30 minutes. Top with a mix of seasoned Bread Crumbs and Cheese, bake for another 10-15 minutes or until bubbly and browned.
