One pound Green Beans
1 pint Grape Tomatoes
Garlic and Red Pepper Flakes (or you can use Garlic Chili Sauce)
Soy Sauce
Sugar or Honey
Fresh grated Ginger (or Ground Ginger)
Preheat your oven to 375 degrees. Wash, trim and string Green Beans if necessary.* You can leave the Beans whole or snap them in half, whichever you prefer. Wash Grape Tomatoes.
In a large bowl mix together until blended: 1-2 cloves crushed Garlic, 1-3 teaspoons Red Pepper Flakes, 2 teaspoons grated fresh Ginger, 3 Tablespoons Soy Sauce, 1 Tablespoon Vegetable or Peanut Oil, 2 Tablespoons Sugar or Honey. Add Beans and Grape Tomatoes and toss to coat them well. Pour onto a lined baking sheet and roast in the oven for 15-20 minutes, stirring once to be sure veggies are evenly cooked. Remove them from the oven and cover with foil or place them in a bowl with a lid. They will continue to cook as they cool down, let them rest for 10-15 minutes before serving. This is a delicious vegetarian dish served with Rice or Noodles or as a side dish.
*To string Beans: snap off the stem end and pull the “string” like a zipper along the Bean. Some Beans need to have their strings removed and some are stringless.
