While a traditional Ragu is a meat-based sauce we like this dish for it’s similar texture and because it uses Veggies only! The Box includes: Saxon Grist Mill Stone Ground Cornmeal; Wanda (Asiago-style) Cheese; Tomatoes; Sweet Peppers; Summer Squash; Garlic.
- Make the Polenta: We like the Saxon Cornmeal to make Polenta, even though it’s a little finer grind the texture and flavor are great for Polenta. Click here for our previous post with the Easy Polenta Recipe. The only difference is we included the Wright Dairy Wanda Cheese.
- Prepare the Vegetable Ragu: Wash, trim and chop Vegetables into bite-sized chunks. We included Tomatoes, Sweet Peppers and Summer Squash. Feel free to add any other Veggies you like or some Meat if you’re a Meat Eater. Heat 2 Tablespoons Olive Oil in a skillet, add prepared Veggies and as much crushed Garlic as you like. Season with salt and pepper, add 1/2 cup liquid of your choice (water, broth, wine, etc.,) cover and simmer for 15-20 minutes. Stir occasionally, Veggies will “melt” into a sauce. Additional seasonings we like: Red Pepper Flakes; Fennel Seed; chopped Fresh Herbs.
Serve Vegetable Ragu with the Polenta and enjoy this tasty and satisfying dish!
