Cheesy Mac & Greens
Choose a fun pasta shape for this and make it different each time.
1. Prepare 1-pound package of Macaroni or other Pasta of your choice. Toss with Olive Oil to coat and prevent sticking. When cooled, mix in 1/4 cup grated Cheese until Pasta is coated, set aside.
2. Wash, trim and chop Kale, Collards, Spinach or other Greens, sauté in 2T Olive Oil until just tender (you can also add chopped Onions or Garlic if you like). To hide them in the dish for picky eaters try pulsing cooked Greens in a food processor or blender to make more of a creamy sauce.
3. Make a roux with 2T Butter, 2T Flour, salt and pepper. Add 2 cups milk and stir while cooking over medium heat to combine and thicken the cream sauce. Mix 2 Tablespoons Corn Starch with 1/2 cup milk and add this to the cream sauce (the corn starch helps the cheese sauce from getting goopy). Stir and cook over medium heat for 3-4 minutes. Turn off heat and stir in another 1/4 cup grated Cheese.
4. Combine the Cheese Sauce, Pasta and Greens. Serve out of the pan or you can top with buttered Bread Crumbs and bake at 325 degrees for 15-20 minutes.
