Laurie came up with this method to make a quick dessert when she really, really, really did not have the time or energy.
1. Wash, cut into quarters and remove the pit from 1 medium Peach per person. Cut into bite-sized chunks.
2. Place in a thick layer in a single-portion ramekin, dot with butter. Place on a baking sheet and bake in a 350-degree oven for 20 minutes.
3. Prepare crumble topping: we know, Southerners use biscuit topping but we grew up in Michigan so it’s crumble. Use Granola or Cereal (or a mix as we did) pulse 1/4 cup per person in a food processor until the bits are the size of Rolled Oats. Mix in 1 Tablespoon Brown Sugar and 1/2 Tablespoon Sugar, add a pinch of Salt.4. Top each ramekin with just enough crumble to cover and bake another 15 minutes. Allow to cool before serving with vanilla ice cream.
